Ingredients:
7 ounces of raw, peeled, unsalted almonds
2 cloves of garlic
6.8 fluid ounces of extra virgin olive oil
5.3 ounces of white bread crumbs (preferably from the previous day)
1 fluid ounce of white wine vinegar
17 fluid ounces of cold water
Salt to taste
Optional garnishes: white grapes or apple slices
Instructions:
In a bowl, place the almonds and peeled garlic cloves.
Add the bread crumbs and white wine vinegar.
Pour in half of the water and let it all rest for at least 30 minutes. This will help soften the almonds and bread.
Then, using a blender or food processor, blend the mixture until it becomes a smooth paste.
While continuing to blend, slowly pour in the extra virgin olive oil in a steady stream. Keep blending until the mixture is smooth and emulsified.
Add the remaining water and continue blending until you achieve a liquid and smooth consistency. Adjust the amount of water to your preference if you'd like it thicker.
Season with salt to taste and adjust the amount of vinegar if needed to balance the flavors.
Refrigerate the ajoblanco for at least a few hours before serving. This will allow the flavors to meld, and it should be served well chilled.
When serving, you can garnish with white grapes, apple slices, or even diced serrano ham if desired.
